1. Skirt Steak

The steer has a lower part which is not so active and somewhat more relaxed. The NY strip has a rather small amount of fat compared to fuller bodied and more flavourful versions. These are mostly sold in portions of about 16 ounces.
6. Top Sirloin
The sirloin is broken down into sections the bottom section and of course the top section of sirloin. The meat is taken from a portion from the rup to the bone of the hip.
The bottom sirloins have a lot of muscle and makes this very tough. The most common use for it is to make ground beef.
On the other hand, the top is more relaxed and has a lot more juice and fat. This is why people love it when they eat out at places like El Momento.
6. Bavette
Also known as the bavette. This is a cut that is flat, and the taste of the beef is very intense. This is a revolution in the world of steaks. Butchers love it, which is also called their slice of choice. The reason is tha they like to keep this for themselves. It is high in fat and so has great taste. What is more, the tiny slow-cooked slices are to die for.
7. Hanger Steak- Great Steak Meat
This one is kind of hard to find. It has great quality but is not so well. This is cut out from the diaphragm as well. The fat is very heavy here.
It is very soft yet tastes as good as or even better than the best steaks.
8. Filet Mignon
Filet Mignon is, without a second thought, the best cut of beef steak available. Filet mignon is cut out from the tenderloin. It is cut from the short loin of the cow. It is the best part of beef for steak. It is surrounded by loose muscles that never get exercise, as per our chef at El Momento. This is the reason this cut is considered to be ideally slim and soft. Filet mignon cuts are made into two-inch-thick slices, and all the tenderloin is cut. Having said that, the actual filet mignon is made from the tender, a smaller part of the tenderloin.
9. Porterhouse Steak meat
There are a host of steaks cuts of beef to choose from, and the range of the characteristics associated in each one, the Porterhouse has the very best in a single. Porterhouses are made from the joint linking the tenderloin with the bottom of the loin (New York Strip) as per our chefs at El Momento. Porterhouses are cuts taken from with bone with the shape of the letter “t,” however they are not the same as T bones.
